- 1teaspoon fenugreek seeds

- 3 to 4 medium-sized potatoes (boiled and mashed)
- 1 onion (finely chopped)
- 2 to 3 green chilies (finely chopped)
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- A pinch of asafoetida (hing)
- Curry leaves (a few)
- Salt (to taste)
- Oil (for cooking)

Instructions:

1. Dosa Batter Preparation:
   - Wash the regular rice, poha, dals, Fenugreek seeds.
   - Soak them in enough water for about 5 to 6 hours.
   - Drain the water and grind all the ingredients together to make a smooth batter. Add water as required.
   - Transfer the batter to a large container, add salt, and mix well.
   - Cover the container and let the batter ferment overnight or for at least 8 hours. The batter will rise and become slightly frothy.
